Ingredients

Yuzu Espuma
  • 50ml lemon juice
  • 50g yuzu juice
  • 100ml water
  • 100ml double syrup (50 % sugar to 50 % water )
  • 12g egg white powder
  • 1.5g Xanthane

Methods and Directions

  • Mix all the ingredients together with a hand blender and add 2 gas capsules to siphon.
  • Keep in chiller overnight and check it well before using.
